Keep the canned creamed corn and kernels in your pantry and you’ll only need SR flour and a couple of eggs to whip up something special in minutes. (The spring onions are optional.)

- 400 g Creamed Corn Use the whole tin
- 400 g Canned Corn Kernels Drain well
- 2 Eggs
- 3/4 cup Self Raising Flour
- 6 Spring Onions Optional. Other herbs or red or brown onion could also be used.
- Cooking Spray Or use a thin brush over of oil
Ingredients

- Mix the creamed corn, drained corn kernels and eggs in a bowl.
- Add the chopped spring onions if you are using them and mix in the flour well.
- Cook heaped tablespoons of batter in a non-stick frypan sprayed with cooking spray to make 22 small fritters.
- Two fritters is one smaller carb serve using the Food Lovers Meal Planner.
